Diabetic Dessert Recipes: Lemon Curd
Pies, Tarts, Curds… All wonderfully tasty and heavenly.
This recipe is for the lemon lovers. Lemon Curd to the max!
Ingredients
3 eggs
3/8 cup sugar
2/5 tsp salt (sea salt preferred)
3/8 cup fresh lemon juice
4 1/2 tbsp salted butter
Instructions
1 Put the eggs in a mixing bowl and beat until fluffy, then gradually add the sugar, salt, and lemon juice to the mix.
2 Add in the butter and microwave on high for about 15-25 seconds, until butter begins to melt. Stir well, rotate the bowl, and then microwave for an additional 1 minute on medium power.
3 Whip up the lemon curd, then microwave again for 25 seconds at medium power. Stir again, rotate the bowl, and repeat process about 3 more times, whipping again after each microwave session.
4 When you are finished, the curd should be thick enough to coat the back of a spoon. If it is a little too thin, remember that it will thicken up as it chills.
