Diabetic Dessert Recipes: Delicious Almond Cookies

Ingredients
3 egg whites
1/8 tsp salt
1 cup sugar
1 tsp vanilla extract
1/2 cup whole almonds , toasted and finely chopped
1 cooking spray
Directions
1 Spray 2 cooking sheets with no stick cooking spray and preheat oven to 250 deg F.
2 Beat the egg whites in a medium bowl until whipped thickly. Add in the salt; gradually beat in the sugar, then the vanilla. Continue to beat until the egg whites are stiff , yet not dry. Gently fold in the almonds (or other nuts).
3 Place the batter one teaspoonful at a time onto the baking sheets; lift the spoon as you place them in order to peak the center. Work quickly so batter does not spread too thin.
4 Bake cookies until lightly browned and hard to the touch on top, about 25 minutes. Remove the cookies and cool on a wire rack.
