<p><strong>Ingredients</strong></p>
<p><strong>3</strong> eggs<br />
<strong>3/8</strong> cup  						 						 						 						 sugar<br />
<strong>2/5</strong> tsp  						 						 						 						 salt 						  						  (sea salt preferred)<br />
<strong>3/8</strong> cup  						 						 						 						 fresh lemon juice<br />
<strong>4 1/2</strong> tbsp  						 						 						 						 salted butter</p>
<p><strong class="directions_hd">Instructions</strong></p>
<p><strong>1</strong> Put the eggs in a mixing bowl and beat until fluffy, then gradually add the sugar, salt, and lemon juice to the mix.<br />
<strong>2</strong> Add in the butter and microwave on high for about 15-25 seconds, until butter begins to melt. Stir well, rotate the bowl, and then microwave for an additional 1 minute on medium power.<br />
<strong>3</strong> Whip up the lemon curd, then microwave again for 25 seconds at  medium power. Stir again, rotate the bowl, and repeat process about 3 more times, whipping again after each microwave session.<br />
<strong>4</strong> When you are finished, the curd should be thick enough to coat the back of a spoon. If it is a little too thin, remember that it will thicken up as it chills.<span id="more-88"></span></p>
